HOMEMADE PEPERO SNACK

Happy Pepero Day aka Single’s Day!

This is a holiday that is celebrated in South Korea and many other countries around the world. It’s a day to convey love and affection towards friends and loved ones, because those people in your life deserve a special day, too!

Pepero or Pocky is traditionally eaten on this day to represent the date 11/11 because the 1’s resemble the Pepero sticks. The original snack was created by Lotte, a food/snack company that also has a chain of grocery stores around the world. Pepero is a wildly popular and well-loved snack, because honestly, who doesn’t love chocolate on a stick?! Plus with their different flavors and fun colors, there’s an option for everyone. Some tips from the kitchen

  • Pepero is intentionally made with the end undipped into chocolate – and for good reason! It prevents the chocolate from melting all over your fingers and keeps it mess-free. I left about 1-inch of the cookie undipped.

  • Biscuit cookie dough can be difficult to work with because of the butter in the dough. Make sure to keep the dough chilled in the refrigerator or freezer to make it easier to work with. I also place my baking sheet in the fridge as well.

  • Feel free to experiment with different flavors! I mixed some white chocolate with matcha powder and dehydrated strawberries to create a natural food coloring. You can try orange zest, blue spirulina, beet powder, black sesame powder, etc. to create other color combinations.

  • For toppings, I used a mix of nuts and sprinkles, but possibilities are endless! Try crushed oreos, cacao nibs, chocolate drizzle, pretzels, cereal, etc.

Ingredients

  • 1 cup AP flour

  • 1 tbsp. sugar

  • 1/4 tsp. salt

  • 3 tbsp. milk

  • 3 tbsp. cold butter, cubed

  • 12 oz. melted chocolate (white, milk, or dark)

  • Any toppings you want (nuts, sprinkles, etc.)

 

Instructions

  1. To a food processor, combine AP flour, sugar, salt, milk, and cold butter. Pulse until well combined and a dough is formed. Form into a ball, wrap in plastic wrap, and rest in the fridge for 10 minutes.

  2. Roll out the dough to 1/8 in. or about 3 mm. thick. Store back in the fridge to firm up, around 5-10 minutes.

  3. Cut off the rough edges of the dough to create an even rectangle. Slice into even 1/8 in. or 3 mm. thick sticks. Separate on a baking sheet to allow even cooking.

  4. Preheat oven to 350°F and bake cookies for 7 minutes, rotate, and another 5-7 minutes. They should be golden brown in color. Cool on a wire rack.

  5. Melt your preferred chocolate in the microwave or on a double boiler. Mix in any colorings/flavors as desired.

  6. Set up your dipping station with the melted chocolates and toppings. Dip cookies into melted chocolate leaving 1 inch of the cookie undipped. Add on your toppings before the chocolate hardens.

  7. Chill in the fridge to allow the chocolate to set and enjoy!
