GOCHUJANG PASTA

Easy go-to week night pasta

Gochujang is one of my favorite ingredients to work with. If you’re unfamiliar with gochujang, it’s a fermented Korean chili paste that’s spicy, savory, and slightly sweet. It’s a super versatile ingredient and makes a great pasta sauce base!

This gochujang pasta recipe is super minimal version of another gochujang pasta I’ve made based on this Eater recipe. I prefer simple yet delicious recipes and this gochujang pasta recipe might take the cake for being the easiest pasta recipe out there. Quick and easy with a few staple pantry items, and you’ll have dinner on the table in less than 20 minutes!

Some tips from the kitchen

  • Gochujang is such a versatile ingredient that can be used in a variety of dishes. Sempio gochujang is one of my favorites because it has the perfect balance of spicy, savory, and sweet. You can find it on Amazon for 15% using code TEEKEATZ until September 15th!

 

  • If you’re lactose intolerant, substitute the heavy cream with your favorite dairy free alternative. Cashew cream, greek yogurt + plant-based milk, and coconut cream are all great substitutes.

 

  • Use your favorite pasta shape! I love a pasta shape with lots of crevices to cling onto the sauce like the gigli pasta I used for this recipe.

Ingredients

  • 2 Garlic Cloves, minced

  • 2 tbsp. Sun-dried Tomatoes

  • 2 tbsp. Gochujang Paste (Korean chili paste)

  • 1 tbsp. Tomato Paste

  • 1/2 cup Heavy Cream

  • 1/2 cup Pasta Water

  • 3 cups Pasta of choice

  • Parmesan Cheese, to taste

 

Instructions

1. Cook pasta according to instructions on package. Reserve pasta water.

2. Into a saute pan, add some oil from the sundried tomatoes and minced garlic. Sweat until fragrant.

3. Add in sun-dried tomatoes, gochujang paste and tomato paste. Caramelize for 2-3 minutes.

4. Add in heavy cream and pasta water. Mix until well-combined and emulsified.

5. Toss in cooked pasta, adding more pasta water if needed.

6. Sprinkle with optional parmesan cheese and serve.
